I am not a morning person and cooking breakfast early is out of the question. However when on South African safari you have to be up early to see wildlife. Fortunately, when I travel with Joan she gets up way before dawn and makes coffee which we traditionally enjoy with rusks.
We get out the gated camp around sunrise. Then after several hours of driving and animal spotting it’s time to return to camp for a proper breakfast and because we weren’t carrying a cooler and cooking very much that meant finding a restaurant.
For me that usually includes a shot of espresso mixed into hot chocolate, 1-2 scrambled eggs, 2-3 rashers of good shoulder bacon (none of that gross streaky stuff we get in the US), 2 pieces of brown health bread preferably with apricot jam, and a slice of baked tomato which is served with everything. Sometimes I’d also add a sausage, or chips (French fries). I’ve really learned to like the baked tomato which reminded me of an edible garnish, unlike parsley. Still firm and seasoned differently.
And when not on safari or traveling alone I still can’t handle anything more than coffee and rusks first thing in the morning.
Your second breakfast sounds very inviting. I would have to try the rusk thing. I guess the closest we have to it in the US that I would know about is melba toast.
I think melba toast would be close, but rusts come in different flavors and are a little sweet.
I like breakfast. it doesn’t have to be fancy or traditional, but it must be there and it must include coffee! Both your first and second ones look good.
I’ll bet you’re a morning person. Any breakfast definitely includes coffee.
That looks delicious. I could hike a long way on that much food. Baked tomato sounds like a good idea to me.

Breakfast looks great. I’m a morning person and love to get up and out and then come home to a yummy breakfast. Just substitute one slice of toast with a tiny sliver of coffee cake and that breakfast would be perfect. But no coffee for me thanks. Hot water with lemon is my drink.
I can eat a big breakfast early only if someone else cooked it.
Breaking to connect with a good meal helps to digest and sink in the overwhelming scenery that you may find your self in. 🙂
I eat more there without much change in physical activity yet my mind is like a sponge.
You are maling me long for my coffee and usks again!! If I came and lived in the USA and started making rusks do you think I could become a millionaire? 🙂
Might take a bit of marketing but I think rusks could become a trend here.
There are quite a few things we have here as traditional food which I think would go down well in the USA. I have for many years considered going to live in the States again and start a business making and selling them. Who knows, I might be sitting on a gold mine of an idea!! 🙂
